Main Dough Technics - Desserts (Traditional Dessert Nevzine)

Introduction

Nevzine dessert is a Turkish dessert made with tahini, pekmez and walnut. It is a regional specialty of Kayseri province. It is usually served on Ramadan and on holidays. Although, where the name Nevzine comes from, is unknown, it is a traditional Turkish dessert. Flour, olive oil or butter and walnut are made into dough and filled into the tray. Nevzine is served to important guests as well as brides who give birth to a boy:

-          In this webquest we will learn about:

Ø  what are related to the quality of Nevzine, ingredients, types of dough technics, tips for using syrup, Traditional way of baking Nevzine.

Ø  Assessment techniques: Tasting, observation, implementing, group work, investigation and internet will be used.

Ø  how to develop a questionnaire for the evaluation of traditional dessert Nevzine

Task

Your task for this webquest is to find out Nevzine and preparing traditional Nevzine.

You and your group (5 students total) will become "experts" on this topic.

Lastly, you will develop a procedure in which you will present all the progress that must be carried out within the departments: service, catering, buffets on the occasion of the presenting and serving the dessert. You will also develop a questionnaire that will help you assess the taste and quality of the traditional Nevzine.
